THE IDEA – PEACHMARY®, DARIO LOISON’S SWEET REVOLUTION
Some people put cinnamon in hot milk, others put rosemary in panettone. Dario Loison belongs to the second category: visionaries who love to surprise. Panettone PeachMary® is not just a novelty, it is a little provocation.
In recent years, there has been increasing talk of panettone in summer or all year round, with tastings even by the sea (the pastry chef from Costabissara was among the first to popularize this trend with his Insolite Cene a base di Panettone, or Unusual Panettone-based Dinners), but now Dario Loison has decided to do the opposite: bring summer into panettone.
This is how PeachMary® was born, an unusual combination of the sunny sweetness of peach and the boldness of rosemary, an aromatic herb rarely used in desserts, which in this panettone becomes the key ingredient in a surprising sweet experience.
Because, after all, even a panettone can remind us that tradition is beautiful, but the courage to change it a little is even more so.
PANETTONE – WHEN PEACHES FELL IN LOVE WITH ROSEMARY…
It took more than two years to combine peaches and rosemary. A period filled with trials, doubts and tastings, which ultimately led to the creation of Panettone PeachMary®, Loison’s new theatrical masterpiece for Christmas 2025.
The soft dough is enriched with semi-candied peaches (more tender and juicy than normal candied fruit) and delicate notes of rosemary, while after baking it is filled with a peach cream. The result is an enveloping and surprising taste: the fruit gives roundness and an explosion of sweetness, while rosemary – Rosmarinus officinalis, a perennial aromatic herb rich in essential oils and polyphenols – refreshes and cleanses the palate, immediately inviting you to take another bite. A captivating, seductive yet “democratic” combination, designed not only for gourmet palates, but for anyone who wants to be intrigued.
Every detail is the result of careful research and selection. Selected varieties of Italian peaches guarantee quality and freshness. Bourbon vanilla from Madagascar, a Slow Food presidium, comes from a small Madagascan artisan family (who have been growing and refining vanilla since 1924) and are custodians of one of the best productions in the world, with whom Loison has been collaborating for over twenty years. The recipe is completed with certified ingredients of controlled origin: free-range eggs, milk, cream and fresh butter. Even the Cervia sea salt, used in small quantities, is chosen for its ability to enhance every dough.
Time is the precious ingredient that distinguishes every Loison panettone. It takes 72 hours of patient work: three cycles of kneading, resting and rising, a slow and natural rhythm that gives the product its unmistakable softness and fragrance.
PACKAGING – PEACHMARY®: BOTANICAL INSPIRATION BY SONIA DESIGN
Sonia Design has created the rigid sage green cardboard box that houses PeachMary® with old-world elegance. The illustrations, inspired by ancient botanical tables, depict rosemary needles and peach blossom branches in delicate shades that recall the two main ingredients. The design is completed by a tone-on-tone double satin handle that adds a touch of refinement. The Loison logo in gold foil, also framed by a thin gold foil, is a must-have detail that further embellishes the packaging and makes it a gift to be proudly displayed.
Panettone PeachMary® is available in three sizes: 600 grams, perfect for a refined gift; 750 grams, the version that everyone agrees on; 1 kilogram, ideal for those with a sweet tooth or as an important gift.
