Loison Pasticceri renews its commitment: the second year of the AIRC Panettone with JRE-Italia begins
After the great success of 2024, the Fondazione AIRC panettone returns, combining confirmed strengths and new features to make Christmas even better.
At the heart of the project is once again the outstanding quality of the ingredients selected by Loison Pasticceri, following the exclusive recipe created by the chefs of JRE – Jeunes Restaurateurs Italia.
The product size increases, from 500 to 750 grams.
Fondazione AIRC’s Christmas is even more special thanks to the charitable panettone made with top-quality ingredients by the master bakers of Loison Pasticceri dal 1938, based on an exclusive recipe signed by the chefs of JRE – Jeunes Restaurateurs Italia. For 2025, the AIRC Panettone returns with some new features: the size increases from 500 to 750 grams.
“From the very beginning, together with Alberto Basso and the JRE chefs, we committed ourselves to researching raw materials capable of giving a distinctive flavour to such a special panettone,” confirms Dario Loison, owner of Loison Pasticceri dal 1938. “In addition to enhancing the natural sourdough through a specific strengthened flour that allows for long fermentation times, we included a category 11 grape, a very light-coloured sultana particularly rich in juice. We also confirmed the use of late Ciaculli mandarin, a true hallmark of Made in Italy, as it comes from a niche Sicilian production. This aspect was further emphasised by adding an oil, also of Sicilian origin, to the recipe. All the ingredients were selected with great care and attention to create a product rich in heart and flavour, capable of brightening our tables this coming Christmas and, at the same time, helping to bring new resources to Fondazione AIRC researchers.”
